Produced at the end of spring, it is a honey that tends to crystallize.
In the liquid state it ranges from almost colourless to straw yellow and when it crystallises it can change from wax white to ice white.
The scent is very delicate and floral. Refreshing, it has a gentle and delicate flavor, sweet but never cloying.
Pairings:
It is suitable for the production of hard nougat and is ideal
for the preparation of various types of desserts, as well as for sweetening teas and infusions. Thanks to its delicate aroma, it does not alter the flavor of foods and drinks and is the ideal substitute for acacia honey.
