Produced between July and August, it is the only honey not derived from flower nectar but from honeydew, a sugary secretion emitted by small insects that feed on the sap of certain plants. With a liquid and slightly viscous consistency, dark amber in color with red to brown reflections,
Honeydew honey has a very intense, fruity aroma, with a spicy note reminiscent of black pepper and cloves. The slightly sweet taste recalls carob and licorice stick. The aroma is of medium intensity and persistence.
Pairings:
In the kitchen it can be paired with fresh cheeses, yogurt, try on pancakes and mascarpone; excellent sweetener for tea and hot drinks.
